Classic Zombie
A Classic Zombie is sort of the Base Line for all other Zombies. They are what Max Brooks talks about in "The Zombie Survival Guide" and "World War Z". They really are dead creatures that try and eat you, your brain, and anything else that's biological. A Classic Zombie is slow moving and takes a little work to kill. They are essentially just a dead body being controlled by a virus and they should be treated as such. If you see your neighbor and he's a zombie he won't think twice about killing you, And you shouldn't think twice about killing him either. The only way you can kill a Classic Zombie is by damaging it's brain. That is a task that is left up too you but the most common ways are with a 22. Rifle or Pistol because they are small enough to enter the skull but not powerful enough to leave thus it bounces around in the skull destroying brain matter. Another way to kill a zombie is to decapitate it but as this severs the head from the body it will not stop the head from trying to attack you. You should use a machete for this. They are already dead so they don't need to water, food or air to survive.

Infection
A Classic Zombie infects it's target by biting it. The virus is very complex. It heightens Hearing and Smelling but takes away from seeing. It is known that humans are very reliant on visuals and zombies are no longer humans so they revert back to their original state, equal senses. They can't feel however. The way the infection works to kill someone is when a Zombie bites someone it releases a poison and the virus. The poison kill you in 7-8 hours and the virus makes you kill, and the cycle continues.

Psychology
They can't think. They are mindless killing machines. The only goal they have is to sniff out humans and bite them. They may eat but they don't need it so it will just pass through regularly except no nutrients will be gained. They do not show social interaction. The only time they may come together is when attacking target. When a Classic Zombie finds food it will Moan and this is a signal for other Zombies to come and attack. It can be used as a signal to get ready for an attack if you hear the moan however

Defense
The only way to kill a Classic Zombie is too destroy it's brain. keep that in your brain as you build your defenses. They give off no body heat so heat sensors won't work. Motion Sensors might work but Zombies move slowly, about walking pace so some may not be picked up on the sensor. You could also add walls to your fort seeing as they are not smart enough to open or climb over them, however if there are enough Zombies they will be able to break through your wall so think concrete is possible. Also look for a building that has a height advantage as Zombies can't climb but they might be able to knock it down. Explosives will scatter them but they won't get rid of them.

Offense
The obvious answer would be to let Nature and Decay take care of that but that will take 5 years at least to completely decay a zombie so it will no longer be a threat and about 50 years before all but a few remain and in some cases, frozen zombies can last generations. You should avoid full auto weapons as they are loud and they waste ammo. A skilled marksman can kill a zombie in 1 shot were as a Moron with a full auto may waste the clip. Be careful when entering a home. Knock on all doors before you open them because there may be a Zombie inside and it will respond to a knock at the door. Also if your entering a building the buddy system is the best way to do it. A 2 person squad with each member about 3 yards apart is perfect. You shouldn't use explosives as this will only scatter their body parts and since they can't bleed to death they will just start crawling toward you if they lose their legs.

Issues with Classic Zombies
First they can't breath and they can move and Muscles require oxygen. Without it the muscles can't contract or relax. Another thing is that if you hit a zombie in the spinal cord it would inhibit all motor functions so I guess you wouldn't have to aim for the head always.
