I have this idea that is very simple and doesn't take much time or materials to make.
Basically take a 55gal drum and put it on a table (anything above the soil. This is gravity powered) Then attach a butterfly valve to the bottom. Screw a hose to the other end of the valve and put a stopper in the other end of the hose. Poke a few holes in the hose and fill the drum with water. Now you can control the amount of water your plants get.

I live in iceland and we cant grow our own food in icealand!

this will be more difficult, but if you can, build the greenhouse to have hydroponics. Hydroponics uses one twentieth the amount of water (helpful, right). It also allows more growing seasons. The only challenge will be giving them other nutrients. Oh, and another note, if you don't properly sanitize the dung for fertilizer, you will be killed by food-bourne illness.

Personally I have already decided to set up a greenhouse in my Attic because it gets very hot up there and is well insulated. Plus it's also easy to get water from if I poke a hole in the roof and set up a collection system.
