I also dont believe in the "Undead" form of the zombie, since, as you said, it defies logic and science. But however since i saw the movie "Quarantine" (a flick about rabid humans), i do believe that rabies could, potentially end the world. A mutated form of rabies, would be; in my opinion; a definate possibility due to so many people researching viral weaponry. Although it is illegal in most large countries, i believe that the government still researches it in secrecy (no i'm not crazy lol). It is only a matter of time before someone starts thinking about creating a mutated form of rabies, and when they do it could potentially change the world in the worst of ways.
