I'd suggest redoing this plan entirely. I don't mean to sound like a jerk but going to walmart is dumb, taking gas guzzling busses and trucks is a waste of gas, everyone will go to Cabellas for guns and pretty much everything there so it's another waste. Avoid places like those because each one will become a nexus of bloodshed, fear, and the undead. Also do you have the MREs already?

Don't forget he'll need a lot more water that, four to five quarts a day for the average adult; and if I'm not mistaken, I don't think Cabellas has an endless stream inside it ANYWHERE. If he wasn't planning on going to THE most stupidest locations during the Panic period, a bus convoy wouldn't be a ridiculous idea. Properly 'renovated' and it could easily become a ram, attack base or home base. So it does have some merit, however slight.

First things first. NEVER use a large vehicle, To little gas milage. Second when the out break starts don't leave your house or home, where ever you live. The chaos of everyone running around, roads jammed up with so many vehicles. And Zombies, everyone yelling and running around will attract alot of them. Wait out the choas and tell loved ones to stay quite and stay inside where it's safe.
