Check out the Badlands backpacks. You don't have to modify most of them and they're really supposed to be rugged, reliable hunting packs.

I really like your picks on clothing and weapons. Do you own or have access to all this kick ass gear? If you do you're off to a good start.

Awesome so far. Can I ask what region you're hunting in and what the common game would be?
Make sure that if you're layered up for the cold that you don't over layer your self; the last thing in the world you want is to sweat when the wind starts pounding you. A lot of people actually get hypothermia from getting their thick clothing soaked; it's just something to think about. Also if you're in a wet or really stormy area it might be a good idea to wear more Poly/Cotton or Nyco as apposed to cotton based clothes; cotton tends to retain moisture pretty bad.
I like both of your firearms choices but why .357? If that's what you have and what you're comfortable with it's all good; I'd consider getting a rifle chambered in a larger caliber though for taking larger game at longer distances though.........but I don't know what the area you're hunting is like (Thus my first question) so for all I know the .357 is perfectly sufficient lol.

He is hunting zombies "purpose: scouting/zed hunting". I don't know what the weather condition is though.

I thank that scouting and killing zombies need different equipment.

Scouting:

Clothing that fits the environment need and that color will blend in to the area being scouted
Boots
Gloves
Pistol belt
Pack with:
Blanket or camouflage for hiding, 10 X binocular,
cooking tin, utensil, fire tool, first aid kit, lens cleaner, maps, note pads, pens, radio, food for 3 to 5 days, 3 liters water, 25 water purification tablets, 1/2 roll t.p., 50 feet rope, knife sharpener, flash light, extra batteries, compass, ruler, protractor, and misc..
Kukri machete
hunting knife
leather man
Savage 30-06 bolt action with 3-9 X 40 scope and 50 rounds
Glock 22 4 - 15 round mags.

This should allow for quick movement, and ability to hide if the need arises to watch zombie packs or other survivors.

Hunting zombies:

Clothes that fit the weather and durable
Boots
Base ball shin and knee guards
Gun belt
Tactical vest
Small pack - 2 to 3 days of food, 3 quarts of water, 25 water treatment tablets, fire, first aid kit, blanket, flash light, radio, batteries, knife sharpener, 100 feet of rope, 8X mini binoculars, map, note pad, pen, 2 paint cans, and extra ammo.
Paint ball mask or other face, eye, and mouth protection.
Kukri Machete
Small fire axe
Leather man
30 inch crow bar

AK with 11 - 30 round mags., cleaning and tool kit, and 100 rounds on stripper clips (in pack)
Glock 22 with 5 - 15 round mags., cleaning kit, and 50 rounds (in pack)
1911 with 5 - 10 round mags., cleaning kit, and 50 rounds (in pack)

This will be heavy but I am hunting zombies and don't want to run out. I can stash some in a safe place before engaging zombies.

A .22 in your "scout" loadout would make sense too. Do you find this valuable?

Dont know that I would waste my time "hunting Zeds" I would go hunting for food, but would not use the energy to actively look for UncleZed, or scout for them for that matter. That being said
For cold weather hunting
Winter goretex/thinsulate (hooded)coat and bibs over thinsulate LJ's, goretex lined boots. Gloves

Depending on whaty I am hunting.
For general hunting( what ever I can find) Rem 870 with mixed bag shells.
Colt 1911. 45
8 inch Hunter
Snow shoes
1 qrt water bottle.
For small game exclusive, exchange Remy 870 for my westernfield.22lr bolt
For large game exclusive, exchange Remy 870 for my Savage 110 30-06 bolt

Warm weather exchange winter cammies for mossy oak pattern warm weather cammies
